yeah, these are that good. they’ll leave you speechless. swears.

Oatmeal Creme Pies
what you’ll need for the cookies:
1 cup butter, softened
1 1/2 cups packed brown sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 cups old fashioned oats

what you’ll do:
1. combine brown sugar, butter & vanilla
2. add eggs and mix, mix, mix until combined
3. add all of your dry ingredients. mix well.
4. bake. 9-12 minutes, 350 degrees.

while the aromas of cinnamon and nutmeg and cookie goodness fill your kitchen, start the frosting.

Frosting Filling
what you’ll need:
8-oz. cream cheese, softened (do NOT go for the fat free stuff. now is not the time!)
1 cup butter, softened
2 teaspoons vanilla
3 cups confectioners sugar (so says the recipe. i stopped at 2 cups. taste test along the way to find your perfect level of sweetness)

what you’ll do:
1. blend your softened butter and cream cheese until smooth
2. add vanilla
3. slowly add confectioner sugar until fluffy

after your cookies have cooled, assemble away. you should end up with this:

gugh! the cookie? soft and chewy. the frosting? a not too sweet, fluffy perfection.

these are so good. i used to love it when my husband would walk in and tell me he could smell the baking yummi-ness in the hall. i think walking into a house with that ‘i just baked something amazing’ smell is so warm and inviting.

  1. Come on, man!!! How the hell am I supposed to get skinny for my bridesmaid dress when you’re putting this stuff out there??? Not cool, little sister. Not cool.

    • ok, but really… they’re not that bad for you! i mean, oats? good. not a lot of sugar? good. and i guess…. i guess, you could have the low fat cream cheese in the frosting. they are so worth it. trust!
